Painting my Gallery Feature Wal
As many of you know, I have been talking about creating my own gallery wall of pictures, where I will print and hang my own version of the "7 Wonders of the World". That's to say, I want to have hang photo's that I have taken during my years of travelling the globe, ones where they the scenery is spectacular and contain many wonderful memories.
Well, I can now say that the first phase has taken place. Yesterday, we (well OK Dad did most of it) painted the wall in a beautiful colour called Grape Fizz.
Next phase - hanging the pictures.
Stayed tuned as it my take another 3 years to complete......

Sunset at Semaphore Beach
Taken whilst on holiday at Adelaide. Semaphore Beach is part of the Adelaide Metropolitan coastline, one long beach extending from North with some spectacular views. Suffice to say, this photo does not really do the place justice.

Spring has arrived
Well I can definitely say that I'm glad that winter is over and that spring has arrived. The past couple of months have been extremely hectic and I need time to unwind and chill out.
What better way to do that than photographing the arrival of spring.

Thai Cooking Class
For those who know me, I am an avid fan of Thai Cooking. So much that I seem to have Thai food at least on a weekly basis.
For years, a friend and I have constantly said that we wanted to do a Thai Cooking class and learn how to cook this wonderful food that we always eat out at, especially considering we are spending a fortune dining out all the time.
Well, we finally got around to doing it and booked our cooking class with a restaurant called Paladarr. This restaurant is one of my favourites, if not the favourite, as the food prepared here is always delicious, mouth-watering and extremely appetizing, leaving me wanting more.
There are two courses available. Beginners chose Master Class 1, whilst those who have some experience already, chose Master Class 2.
The courses that were part of the Master Class 1 were:
Por Pia - Spring Rolls
Sweet Chilli Dipping Sauce
Moo Gatee - Pork Dip
Larb Gai - Issan Chicken Salad
Kaeng Om Gai - Fragrant Issan Chicken Curry
Pad Ped Goong - Hot & Spicy Prawn Stir Fry
Chaloem was a joy to watch and an experienced teacher. I have no doubt that I shall enjoy cooking many more meals to come. Would love to show you some examples of the food we cooked but unfortunately it didn't make it home, it just had to be eaten. Although I do have this photo of my Thai Cooking experience.
In a couple of weeks, I'll try to cook the food again and show you my results.

Good Friday's lunch
Had some friends over for Good Friday lunch and gave them "Thai Style Whole Fish" for lunch.
Must say I was impressed with the way the fish turned out. It was scrumptious.
Receipe was:
1kg Fish (I chose Snapper)
2 cloves of garlic, crushed
1 tbsp fish sauce
2 tbsp lemon juice
1 tbsp fresh giner
2 tbsp chopped fresh coriander
1 tbsp rice vinger
2 spring onions, cut into strips
Preheat oven to 190 degrees. Place all ingredients, except for the fish, in a jug and mix well. Place the fish on a large piece of well greased foil in a baking dish. Pour the marinade over the fresh and sprinkle with the extra spring onions. Wrap fish into a parcel and bake for 20-30 minutes.
Place on serving tray when cooked, decorate with lemons and extra coriander.
