This rather simple, one-pot meal will soothe
an upset stomach and satisfy the taste buds
while supporting the immune system.
Start with @2 Cups Water
- Sweet Potato cut in cubes
- Veg of choice (Carrots are good for stomach)
- Spinach / Kale
- Salt, Parsley, Ginger, Basil, Garlic
- Peppermint Leaves (dried tea leaves; I use Peppermint tea leaves in a diffuser. You can steep in 2 cups of water or place diffuser in the pot of water with vegs.)
Cook until potatoes are done.
Add Rice Noodles —Cook noodles as directed. The Peppermint adds a nice taste to the noodles.
NOTES:
Peppermint: helps with indigestion, headaches, stomach upset, sinusitis…
Garlic: Garlic is low in calories and rich in vitamin C, vitamin B6, and manganese. It also contains trace amounts of various other nutrients.
Greens fight belly bloat, inflammation, and support optimal gut health; supports Immune System; boosts digestive enzymes.
Sweet Potatoes are high in easily digestible Vitamin C and Vitamin A.
Ginger has a very long history of use in various forms of traditional and alternative medicine.
It’s been used to aid digestion, reduce nausea, and help fight the flu and common cold, to name a few of its purposes.
