Having had to discard fresh lemons and limes that had spoiled in the refrigerator I was excited to see crystallized True Lemon rated so highly on America's Test Kitchen. I learned that the same company made True Lime about which I was even more excited because I had discarded many limes that got so hard in the fridge I couldn't get any juice out of them. I had several times bought a bag of limes and using an electric juicer to save the juice in an ice cube container. It was really tiring holding the halved fruit on the whirling juicer and the yield was sparse. I bought a couple of containers of the True Lime to sprinkle over my pad Thai and it was as good as the fresh juice. Since I use lemon more frequently, I bought a box of 500 packets. Sounds ridiculous but smaller containers are very expensive in the long run. I'm saving them in a glass jar and hope that keeps them from drying out.
