My Stir-Fry ‘Lasagna’ (was hungry for Lasagna but in a hurry to eat). These are the same ingredients I’ve used for baked and for Crockpot Lasagna but done in a Stir-Fry Pan.
Stir-fry Pot on Med Heat
3/4 Cup Crushed Tomatoes
1/2 Cup Tomato Sauce
TBSP Nutritional Yeast
3 Mushrooms Sliced
1/2 Onion Sliced
Sliced Sm Yellow Bell Pepper
Seasoned with Black Pepper, Italian Seasoning, Ginger,
Cumin, Celery Seed, Garlic
6 Sliced Black Olives
Cook a few minutes stirring often
Added desired Vegetables. (I used a bag of frozen Stir-fry Vegs) and
Handful chopped Fresh Spinach
Zest 1 Lemon or Lemon Juice
Crumbled 2 Slices Lentil Loaf I had frozen previously
1/2 Cup Cashew Cheese Sauce
Continued cooking until Vegs were desired doneness.
In separate pot cooked Pasta (broken pieces) until just slightly
sliceable with fork.
Added to Stir-fry along with 3 or 4 TBSP of Pasta Water
Cooked about 3 minutes more. Bon appétit❣️
