Maple-Glazed Pork with Chilli Beans

Put pork belly slices into a shallow dish, season with a little sea salt and freshly ground black pepper and roast in a 200°C oven
for 30 minutes, turning once or twice. Meanwhile, combine 4 Tbs maple syrup with 1 Tbs dark brown soft sugar, a large pinch of
ground cinnamon and a pinch of smoked paprika and simmer gently for 2 – 3 minutes, until the sugar is dissolved. After the pork
has cooked for 30 minutes, spoon off any liquid that had accumulated and brush the slices with the maple syrup mixture. Return
to the oven for another 20 minutes or so, basting a few times. Meanwhile, prepare the beans, as follows: fry a chopped onion,
a crushed clove of garlic and a chopped deseeded red chilli for a few minutes, then add 3 – 4 chopped peeled tomatoes, a tsp
tomato purée and a tsp sugar. Cook this for a few minutes, until the tomatoes start to break down into a thick sauce.
Add a drained can of butter beans and simmer for 10 minutes. Season to taste. Serve the beans with the pork slices,
accompanied with a side salad of avocado, orange and watercress.
