Another cooking day.Man this is fun. Today it was chili. The real way to make it is starting with ancho chilis. It takes a little bit of work, but the resulting chili paste it very tasty, a little bit bitter as well. Using it in place of chili powder makes it seem "authentic" Mexican. Now some idiot out there is going to accuse me of cultural appropriation. You have obviously mistaken me for someone who gives a damn about that.
The recipe being used is well proven. Today the meat I had was a chopped (as opposed to ground) beef that is what you might use making tacos. Normally ground beef would be the meat, but this stuff was on sale and we decided to have a go. As usual, I was doing the mis-en-place thing. Very important especially today when I discovered in the process that I was missing an ingredient. Fortunately Ginny was heading out and was able to make a quick trip to Kroger to retrieve the errant component. By the time all was said and done and we sat down for the repast, the odor of chili had permeated the house. Throw on some pickled jalapenos and some cheese. How good is that?
