Singapore Sling. Mon 9.

Purvis Street (aka
Hainan Second Street by the Hainanese and
other Chinese communities) is renowned for
its role in the food and beverage industry in
Singapore. Hainanese kopitams (coffee shops,)
in the area, were regarded as the best in South
east Asia, and Ngiam Tong Boon (a Hainanese
barman who worked at nearby Raffles Hotel) is
credited with the invention of the Singapore Sling.

Bev and I had Singapore Sling in the “Long Bar” in
Raffles Hotel. They cost SGD32 each. OUCH!

Here is a recipe for a Singapore Sling from;

Ingredients:
1½ ounces (30 ml) Gin
½ ounce (15 ml) Cherry Heering (Cherry Brandy)
¼ (7•5 ml) ounce Cointreau liqueur
¼ ounce (7•5 ml) Dom Benedictine
4 ounces (120 ml) Pineapple juice
½ ounce (15 ml) lime juice
⅓ ounce (10 ml) Grenadine
A dash of Angostura Bitters

Directions:

1 Shake with ice
2 Strain into an ice filled “collins” glass
3 Garnish with cherry and slice of pineapple
