This cellar in the Champagne region (near Reims) is hand dug into the chalk subsoil to a depth of 15 meters Here are resting (maturing) about 200 000 bottles, for a few years before they can be sold and consumed. The temperature in the cellar (summer and winter) remains constant at 13 ° C.
