Pisco. Sun 26.

during the sixteenth century,
around the time when Pedro de Valdivia and his Spanish
conquistadores “conquered Chile, there was an alcoholic
beverage called Orujo which was quite popular in northern
Spain. When the Spanish colonised Chile they planted vines,
crushed the grapes and extracted the juice for winemaking.
They then fermented the residue (grape skins, seeds and
stalks) in closed vats, then distilled the brew in a copper kettle
over an open fire (for 6 hours or so) in an attempt to replicate
the taste of orujo. The liquor produced is known, in Chile, as Pisco.
