the fermentation process
takes place in these barrels and the little plastic tube, which
comes out of the barrel into a bottle of liquid, allows gases
(I think carbon dioxide is one of them) which are a created
when the yeast interacts with the sugars, to escape safely
through an airlock which prevents the cask from exploding.
At least I think that is why the tubes are there.
