Pineapple coockies were probably adopted from an old Dutch style. In this case, the filling is made out of pineapple "paste" that is still fibrous though. Some similar cockies are filled with cheese. The shape of the cockies indicates the filling content, at least it is typically the case although not always. She is a long time owner of a small restaurant in Cipanas, a resort area some 120 km away from Jakarta. I don't know her but it wouldn't surprised me if she had been at the restaurant even prior to 1970.
