My favorite restaurant in Seattle is the Wild Ginger....
It has been years, but they made a Squash soup that was absolutely to die for!
I wanted to see if I could recreate it.... trial and error brought me a
resounding and delicious success!
Lite Coconut milk, Vegetable Stock... onion, garlic, fresh grated ginger....
and a little hot chile sauce for a kick....
I think I'm in love.
