My first stollen...

and it will be made again and again. No more Entenmann's stollen for us! This is scrumptious, despite the fact that it didn't rise to double the height in the prescribed one hour - I've read it takes a lot longer than that to rise. I also couldn't find real marzipan so I used Solo canned almond paste - and a lot less. That was a good idea. I'm going to make it in the bread machine next time. Check out this link with the recipe and the advice about using a bread machine for the dough - not baking: http://allrecipes.com/Recipe/Christmas-Stollen/Detail.aspx (I also had to add a bit more flour since the dough wasn't coming together. I also didn't use all the fruit - The fruitcake mix and raisins are enough. I did use the orange and lemon peels for flavor. Real marzipan would probably be a bit stiffer than the Solo Almond Paste.)

I absolutely loooooove stollen. My grandma used to make it at Christmas, and my aunt now carries on the tradition. And since I don't get to spend the holidays with them, they always send me a loaf. Looks like you did a very good job for your first effort! Feel free to send some my way :-)
