When a customer places an order for the bile concoction the staff select 3 snakes and quickly locate the gall bladder by palpitation of the belly. I saw them do a couple of snakes whilst I was there and they pretty much went straight to the right spot. They made a small incision which looked to be under one of the ventrals and pulled or squeezed out the bladder. You can see the small blueish or purplish body in this and the next photo. A couple of drops of blood are spilt but there is no gaping wound. As sickening as this is to watch....they are very adept and skillfull at dong it. The snakes are then placed in the wire containers next to the kitchen from where they will ultimately end up as soup. The gall bladders from the 3 snakes are mixed up with a type of wine or spirit and served up in a small bowl as a "powerful" tonic. This costs $200 HKD and is considered somewhat of a luxury compared to the snake soup which is standard fare.
