June 22, 2005 this is taking my June 21st image and manipulating it in photoshop using knife pallette, dry brush, fresco and a texture. I also lowered the saturation on this image a fair amount.
Interior light is alway a challenge to work with. It's often a personal decision (mood, color, accuracy, etc.) that the photographer has to make. I see you have adjusted the color temperature to remove the warm cast from incondescent light. Your process worked well.
Two other observations:
1. The Mark two will push well beyond 640 ISO with limited noise. I have shot images this month in my PAD that were taken in clubs @1250 ISO (and even 1600) handheld with pleasant results. Depending on your lense (macro is the main exception) you will get plenty of depth of field without closing the aperature (say f/6.3 or f/7.1 instead of f/16) and will boost you shutter speed especially in combination with the higher ISO.
2. I'm sure you have figured the shutter slap (very authoritative on Canon 1 series cameras). If you shoot 1/15 second or slower, it's a good idea to use the mirror lockup function (function 12 under the custom functions) along with the remote release or delay (2 seconds usually works). This keeps even the slightest vibration from blurring the image.
