You can see your reflection in an owl's eye because owls have a reflective layer in their eyes called the tapetum lucidum, which is a layer of cells behind the retina that enhances their night vision.
This layer reflects light back through the retina, and when illuminated by a light source like daylight or the sun, it can reflect your image back to you. This phenomenon is often called "eyeshine.
