Roasting a steak is a real art...

I can teach you my secrets...
Fry the steak well in a pre-heated frying pan for about 6 minutes each side.
Be careful not to prick the meat when you turn it to prevent the juice from escaping.
Add salt, pepper, dried rosemary and put the steak in an oven dish and place this in the oven which
will be already warm, but at a very low temperature, about 100°C.
Pour some white wine into the frying pan and stir it well into the the meat gravy, then add this delicious mixture to the steak which you are putting in the oven.
Let it rest in the oven for at least 30 minutes, keeping the temperature low.
In the meanwhile you can prepare your vegetables.
Boil the beans and the peas in small separate casseroles in boiling salted water.
Don’t boil the French beans too much : they must be still a little crispy.
The potatoes are simply roasted in a little olive oil with garlic, salt and pepper.
Add the ham cubes to the green peas with half a teaspoon of butter.
Add two tablespoons of fresh cream to the broad beans and a little pepper
and stir until it coats the vegetables.
Add a half teaspoon of butter on the French beans before serving,
it will melt by itself on the top of your vegetables.
