It's more of a show than making good food. The "tea" as it's called is made of wheat or ground taro or corn, mixed with ground sesame seeds and brown or white sugar. Once all the mixture is in a bowl, the chef would push with one hand a huge brass teapot filled with boiling water. Then he positions his other hand with the bowl to catch the hot water pouring out from the sprout. It's amazing that they would let people watch it so closely without signing a release form, as it would have in the U.S.
