Farinata

Thin layer of chickpeas flour, salt, water and oil cooked in wooden oven until crisp.
You can add sliced artichokes or gorgonzola or rosemary or salsiccia (similar to sausages but better ;) ) or "bianchetti" (newly born fish, normally anchvies).

didn't know that chickpeaflour was used in Italian cooking...but it sounds delicious!
