White SD Sponge - 8:30 AM

This is what it looked like after perking since about 10 PM the previous night. This recipe uses a starter fed on white wheat
flour, plus water and a few percent of rye flour. There is a small amount of whole wheat in the final dough. Made with high
hydration and stretching and folding during the rise, this bread has a complex flavor and lots of irregular holes in the crumb.
