A speciali treat is künefe. It is famous as an Antakya specialty, but has gradually conquered the whole country. Istanbul künefe wasn't bad, last time I ate there.
It is made from some "shredded wheat" (I ate this in England in the '70's), and to see that kadayif bing produced is a feast in itself. Here I group pictures of that, taken over many years. I could latere add: A picture illustrating this on the Wikipedia stated “Antakya künefesi yapılan bir işletmede, bu amaçla kullanılan özel kadayıfın imalatı.” Google translates this as “Production of special shredded wheat used for this purpose in a business where Antakya kunafah is made.” I concluded a substance that is called “Tel kadayıf “ is produced. kadayıf being a more general word for (sweet) pastry dough. I also found in the Wikipedia: “Tel kadayıf genellikle yumuşak ve yarı pişmiş kıvamda satın alınır.” Again translated: “Wire kadayıf is usually purchased soft and half-baked.” On the web one can find it sold, a wiry whitish substance on some pictures.
