I was telling a friend that I loved smoke trout spread and was looking for the ultimate recipe. She suggested something that was very simple: smoked trout, cream cheese, and, would you believe, vermouth? (I used whipped cream cheese because that's what I had in the house). Did a taste test and while it was good, decided it needed a bit of onion, so I added some colorful diced red onion. Still needed a bit more "kick" so I added some lemon juice. PERFECT! If you make this, use a plain crackers. You don't want the flavor of the cracker to overpower the flavor of the spread.
