Funny that you posted this...I like sharp knives too and for the longest time my favorite knife was an ugly discolored carbon steel Sabatier slicing knife. I often said that if the house was on fire that knife would be one of the first things I would grab. Since the last time I said that a neighbor introduced me to some cheap white handled Santoku knives in Sams that come in packages of two. They're marvelous! I think they cost something like $13 for the two of them!
