Spencer eating an open-faced quesadilla I made with butter,thinly-sliced tomato,grated cheddar cheese,and a mixture of grated parmesan and romano cheese from Trader Joe's. Briefly heated with a little butter in a fry pan for a few minutes, the tortilla is then coated with tomato and cheddar cheese and is broiled until crisp, then topped with the parmesan/romano mixture,cut into wedges and then served almost like pizza.
