Chicken double-cooked.jpg

2011_0104 Twice-battered chicken breast meat strips. Deep fried in canola oil for three minutes, these brined chicken strips are juicy, moist, and tender, and ever-so-slightly sweet. Served with ranch dressing, honey mustard, or any other dipping sauce, these are delicious and soooo much better for you than factory-made ones loaded with bad stuff.

Brine is approx. 1 unit of salt, 1 unit sugar, 30 units water, 1 unit garlic powder, 1/2 unit chili powder. Brine overnight. Egg wash is 1 jumbo egg per 2 breasts, about 2 oz half and half per egg. Flour is "to taste" with garlic powder, pepper, chili powder; also, paprika can be added, as well as anything else you like.
