I think you will find that the Canon DSLR's Digic Processor is set to shoot (what appears to be softly) for post processing (including sharpening). The factory settings are just that way. This keeps noise to a minimum even after properly sharpening (the control is in your hands).
You can change the degree of in camera sharpening if you so desire. That might give you more of the result like the Fuji (but also the related noise).
