1 Cup All-Purpose Flour, sifted
½ Tspn Kosher Salt
1 Tspn Baking Powder
1 Tspn Baking Soda
2 Tbspns Sugar
1 Cup Buckwheat Flour
1 Egg, well beaten
¼ Cup Butter, melted
2 Cups Buttermilk
In a mixing bowl combine the all-purpose flour, salt, baking powder, soda and sugar. Stir in the buckwheat flour.
In another bowl combine the egg, butter and buttermilk, mix well. Pour into the other mixing bowl with the flour and quickly stir it together, but do NOT over stir it. It will be lumpy, that is not a problem.
Heat your griddle up until very hot. I spray on a little canola oil and then use a ¼ cup or so of the batter for each pancake. When they bubble slightly on the surface, and the edges seem to “dry,” I flip them and cook for another couple of minutes.
Serve with real maple syrup (not maple flavored – get the real thing!). We also like tasty sausage links on the side (that’s what’s in the iron pan in the background of this photo…)
