2 or 3 Russet Potatoes
1 Medium Onion – diced small
Kosher Salt & Fresh Ground Pepper to taste
1 or 2 Large eggs
2 Tbspns Fresh Parsley - chopped
Grate potatoes & dice the onion; mix in egg and other ingredients. Panfry by spoonfuls in shortening on both sides until brown and crispy. Serve with applesauce, salads or any meat dishes.
