So all I've actually done in Capture One is increase the contrast right up 49. This blacks out the background, and most of the area in front of the plate. That is the result you see here.
Then I've taken this image into photoshop and rotated it a degree or so clockwise and adjusted the levels overall. The remaining areas in front of the plate I've used the burn tool to fill in the shadows, and then the dodge tool to bring back the midtones of the knife and fork. Nothing complicated there that wouldn't be done in a traditional chemical darkroom. Finally some cropping, USM and border. Then of course, I've posted it in eligible :-)
