Thanks Bob. I normally use whole spices which I grind just before using, but they don't have attractive purple labels! I must say, though, for curry in a hurry, Patak's is the best paste.

Basic ingredients is a good start but ditch the 'P' and replace with Cummin, Fenugreek, Turmeric, black & yellow Mustard seeds, Peppercorn, Bay leaves, Cloves, a little Garam Marsala and a touch of Chilli to taste and you have a great curry base after you have made the crushed tomato/Onions and Garlick Stock. Now that's the way to go Alastair. But I do like your composition! ~ Regards, Bob .. Oh!... and some Coconut Cream is good as well!.. and you got the other necessity... Red Wine!
