Sugarbush: the gathering tank in this picture has been left year-round in a forested area where sugar maple trees will be tapped to gather their sap in the spring. in the past, the usual practice was to hang buckets from metal spouts and go around to pour the contents of the buckets into a wagon-borne gathering tank. These days, sugarmakers often use vacuum pressure to draw sap from special spouts into permanently installed plastic tubing that empties intp the gathering tanks. Such equipment may be less romantic in appearance than the historic scenes printed on some cans and jugs of maple syrup, but it assures continuity in the harvests even when temperatures do not drop below freezing at night, as they had to in the old days for there to be another "run" of sap.
