Chickory: often seen along roads later in the summer, these blue flowers indicate the presence of a plant whose root, after being roasted and ground, has served as a coffee-like beverage during times when coffee was rationed or too costly. It is a classic example of the kind of roadside plant many Vermonters consider to be threatened by too-prolific invasives like poison parsnips and wild chervil.
