Low-Acidic Pasta

This recipe is quite good, although different
from my usual pasta that would have lots of tomatoes,
tomato sauce, and onion. Currently dealing with a hernia I’m
Limiting acidic foods.

Prepared Veggies for steamer:
(Use what you like)
Sliced Carrot
Sliced Cauliflower
Sliced Mushrooms
A little sliced Yellow Squash
Heaping Handful Spinach
Seasoned with Bagel Seasoning
Steamed for 18 minutes

Prepared water for pasta in separate pot with salt.
Brought to boil and added pasta.

Once the pasta was almost tender, I drained off
Most of the water leaving about 2/3 cup water.
Added Half can Diced Fire Roasted Tomatoes for 2 Cups pasta.
3 heaping TBSP of Mild Salsa
Added the steamed vegetables
Added grated non-dairy Cheese and Nutritional yeast.
Added a chopped piece of pre-cooked Lentil Loaf
And about 1/2 can rinsed ChickPeas

Cooked another few minutes until all veggies
were as done as desired.
