Porkchop with sautéed apple spice topping

Quail Creek, AZ

Made by my wife, and inspired by "Pork Chop: 60 Recipes for Living High On the Hog"
by Ray Lampe and Jody Horton | Oct 12, 2021
Served with stuffing and butternut squash.

Marilyn made the dinner before I was inspired to photograph it.

This is probably here on a temporary basis - but who knows.

I like fried clams, grilled shrimp, sauteed scallops, and broiled lobster. All of them taste better when near the ocean.

Sauteed scallops - one of my favorites for dinner. But when I was lucky enough to vacation at the Jersey shore, we would sometimes treat ourselves to deep fried scallops for lunch -- can't beat those.

I ended up sautéing the scallops. It's still my favorite way.

Dave - per CoPilot " Yes, the latest edition of "The Joy of Cooking," published in 2019 by John Becker and Megan Scott, includes recipes for air fryers! This edition features over 600 new recipes, including options for quick and make-ahead meals, as well as recipes for modern kitchen appliances like air fryers1."

We have several cookbooks, but more and more I find myself using recipes found on the internet. For instance, I'm going to try cooking scallops (they're defrosting as I type this) in our new air fryer. All of our cookbooks pre-date that device. I wonder whether recipes using it are included in the latest edition of "The Joy of Cooking".

Whether it stays in the challenge or not it certainly looks pretty dang good. Paul

Apples and pork go well together. Marilyn always has a side of applesauce with them. Lots of recipes exist with apple slices cooked with pork.
Today she chopped up the apples and sautéed them with some spices and apple-cranberry juice, as she was out of plain apple juice. I have put sliced apples on pork spare ribs.

My goodness, that is a creativity I never thought of....but of late, I am putting diced apples in my salads...something new. By the way, how is the taste of apples and pork chops? Curious people want to know....Best Wishes, Traveller
