Parboil halved new potatoes for 5 minutes, drain and put into a roasting pan with a Tbs olive oil. Season and toss to coat with the oil.
Add pork sausages and an onion cut into slivers, toss everything together and roast in a 190°C oven for 30 minutes, turning once or twice
to ensure even cooking. Take the pan from the oven and add apples cored and cut into wedges. Mix 2 Tbs whole grain mustard, 2 Tbs maple syrup
and a Tbs wine vinegar and stir this into the pan, making sure everything is well coated, then return to the oven for another 15 – 20 minutes.
Transfer to a warm serving dish, garnish with chopped parsley, and serve with a green veg.
