Ham and Cauliflower Cheese Gratin

Using up a bit of leftover baked ham!
Cut leftover ham into bite-sized chunks and place in a casserole dish. Cut cauliflower into small florets and parboil
for about 3-4 minutes, then drain and add to the ham. Peel and cut potatoes into slices and parboil these for 3-4 minutes,
drain and set aside. Make a cheese sauce by melting a good knob of butter in a pan and adding a couple of Tbs plain flour.
Cook for a couple of minutes, then add whole milk in stages, stirring over a low heat until you have a nice smooth and
thickish sauce. Season with freshly-ground black pepper and add a couple of handfuls of grated sharp cheddar cheese,
stirring until melted and the sauce is smooth. Pour over the ham and cauliflower, then cover this with the parcooked
sliced potatoes. Dot with a few small knobs of butter, season with black pepper and bake in a 180°C oven until bubbling
and browned on top, about 30 minutes. Serve with a green veg.
