A very simple dish! Just wrap a piece of ham in foil and bake in a 170°C oven for a couple of hours or so.
For the sauce, melt a knob of butter in a small saucepan and add a Tbs of plain flour. Stir to combine over a low heat
to cook the flour – this is a roux, the basic thickener for a simple white sauce. Stir in a cup of whole milk and mix
thoroughly, again over a low heat, until the sauce thickens and is smooth with no lumps. Add more milk if it is too thick.
Season with a little salt and pepper, then stir in a Tbs of grain mustard and some chopped dill. Simmer for a minute or two
to blend the flavours, then serve over slices of ham, alongside boiled new potatoes and broad beans.
