An old-fashioned dessert from the deep south of the USA!
Make a pie crust using your favourite pastry recipe, and prebake. Mix together 300 g of sugar with 3 Tbs plain flour, then whisk in 3 large eggs,
250 ml buttermilk, 100 g melted butter, the grated zest and juice from a lemon and 1 tsp vanilla extract. Pour this into the prebaked pie crust
and bake for 35 to 40 minutes in a 170°C oven, until almost set. Remove from the oven to cool, and it will firm up. Serve with some soft fruit.
