Beat 4 egg yolks with 80g icing sugar until light and fluffy, then stir in 350g mascarpone cheese. Beat 4 egg whites until stiff,
then fold in the mascarpone cheese mixture. Briefly dip savoiardi sponge fingers (lady Fingers) into orange juice and place a layer
in a glass bowl. Top with some sliced strawberries, then spoon over half the mascarpone mixture. Add another layer of sponge fingers
dipped in OJ, top with a layer of sliced strawberries and then the rest of the mascarpone. Decorate with whole strawberries and leave
to chill for 2 – 3 hours, until set.
