Cut pork fillet across the grain into thin slices and fry in hot oil until just cooked. Drain and set aside.
Stir-fry a selection of vegetables (I used a store-bought packet that included mange-tout, broccoli, baby sweet corn,
spring onions and a red chilli pepper) for a couple of minutes, then return the pork to the pan together with 3-4 Tbs
hoisin sauce, a Tbs light soy sauce and a Tbs oyster sauce. Simmer for 2-3 minutes, until everything is piping hot.
Meanwhile, cook rice noodles according to the packet directions – typically just a few minutes in boiling water suffices.
Serve the pork over the noodles.
