Beef in Bud

...weiser!
A variation on the classic beef braised in beer. Cut stewing steak or braising steak into 3-4 cm chunks, coat well in seasoned flour
and brown in hot olive oil. Drain and put into a casserole dish. Fry chopped onions and chopped carrots, together with a crushed clove
or two of garlic, until the onion starts to turn golden, then add a can of Budweiser beer. Season well with freshly-ground black pepper
and a little salt, then bring to a simmer and pour into the casserole dish, adding more beef stock if necessary to cover the meat and carrots.
Cover the casserole and bake in a 160°C oven for about 2 hours, checking from time to time to ensure it doesn't get too dry.
Serve with mashed potato and buttered cabbage.
