Cut smoked sausage into little disks and put into a roasting pan. Cut a red onion into vertical slivers and add these.
Cut a red pepper into small chunks, cut a courgette in half lengthwise and then slice into 1 cm chunks, and add these to the sausage.
Add a finely chopped clove of garlic, sprinkle with olive oil and mix everything well to coat with the oil, season with sea salt and
black pepper then put into a 180°C oven for 30 minutes, stirring once or twice. Then stir through a couple of tomatoes, cut into
small wedges, and cook for another 15 minutes. Garnish with parsley and serve with rice or other grains of your choice
(I had a packet of mixed grains, comprising rice, quinoa and buckwheat, which was very tasty).
