Fritata

Cook some potatoes until just soft, drain and let cool a while, then cut into slices. Cut bacon into 3 cm chunks and fry until golden and crispy.
Drain and set aside. Fry a chopped banana shallot and some chopped red pepper until softening, then add the potatoes and continue frying until they start
to turn brown. Add some frozen peas and the bacon, and heat for 2 – 3 minutes to cook the peas, then pour in 3 beaten eggs, seasoned with a little sea salt
and plenty of freshly ground black pepper. Mix well and cook over a low heat until the bottom starts to come away from the pan, then sprinkle with crumbled
feta cheese and flash under a hot grill (broiler) for 3-4 minutes, to set the top and melt the cheese a little. Serve with a simple salad.
