With potatoes, courgettes, red onions and tomatoes.
Parboil halved new potatoes for 5 minutes, drain and put into a roasting dish with pork sausages and a chopped red onion.
Sprinkle over a little olive oil and mix well together, then put into a 170°C oven for 30 minutes, turning everything once
or twice to ensure even browning. Then add a couple of small courgettes cut into chunks, mix together and continue roasting
for another 15 minutes. Finally, add quartered tomatoes, roast for another 5-10 minutes, and serve garnished with chopped chives.
