Salted Caramel Pancakes

Another dish using something given to us, in this case a jar of salted caramel sauce.
For the pancakes, whisk together 110g plain flour, 2 eggs, 200ml milk until creamy with no lumps. Let stand for 30 minutes before using.
Melt a little lard in a small frying pan and, when smoking hot, pour in about 2-3 Tbs of the batter, swirling it around to cover the bottom
of the pan. When the edges of the pancake start turning brown, flip the pancake over with a spatula and cook the other side for another
minute or so. Remove from the pan onto a tray, with the first-cooked side downwards, spread some caramel sauce over half the pancake,
fold over into a D, then spread a little more sauce on half this and fold again into a triangle. Place onto a baking sheet and keep warm
in the oven while you cook the rest of the pancakes. Then serve the pancakes with a little more caramel sauce poured over them.
(You could also use chocolate sauce for this, too!)
