Slice kielbasy sausage (Polish smoked sausage) into thin discs and sauté in a little oil for a few minutes, until starting to brown,
then add chopped onions and crushed garlic and continue to cook until the onions are translucent. Skin and chop 4-5 ripe tomatoes
and add these to the pan along with a half glass of dry white wine and cook until the tomatoes break down into a nice thick sauce.
Add a drained can of cannellini beans and heat well, then stir in baby spinach until just starting to wilt and serve straight away.
