Indonesian fried rice, a popular street food. Prepare all the ingredients beforehand, then it takes less than 10 minutes to cook.
First, boil some Basmati rice, drain, spread out on a tray and let it go cold. Fry chopped ginger, red chilli (deseeded if you prefer)
and garlic until fragrant, add carrots, cut into long thin strips with a potato peeler, and stir around for a minute or so, then tip
in raw prawns and stir fry until they start to go pink. Add a large handful of beansprouts together with a Tbs of kecap manis
(Indonesian sweet soy sauce) and a Tbs light soy sauce, stir again to mix well, then add the cooked rice along with sliced spring onions.
Keep stirring until it’s all piping hot, garnish with chopped coriander and serve topped with a fried egg (which makes it nasi goreng spesial)
and seasoned with black pepper.
