Another delivery of excellent bacon – this time smoked streaky, which we had with colcannon, the Irish version of bubble and squeak!
Blanch shredded green cabbage for a few minutes, drain and set aside. Boil potatoes until soft, drain and mash, stirring in a good knob
of butter, the cabbage and thinly sliced spring onions. Serve spread out on a hot plate, topped with streaky bacon cooked until nice and crisp,
and a fried egg, finishing with a few grinds of black pepper.
