A classic, this! Make thin pancakes, about 6 inches in diameter, using your favourite recipe – there are loads on the Internet (also, see next image).
Stack between sheets of baking parchment until ready to finish the dish. Add a couple of Tbs caster sugar to a dry frying pan and heat until it starts
to caramelize, mix in a large chunk of butter, stir to combine then tip in the squeezed juice of two oranges and half a lemon. Stir rapidly to dissolve
the caramel, add the grated rind of an orange and half a lemon, and simmer to make a thin sauce. Now, get a pancake, brush it with some of the sauce
then fold in half, brush the half moon with more sauce, fold into a quadrant and place in the pan. Repeat with the rest of the pancakes. Then, when all
the pancakes are in the pan, bring to a simmer, add orange segments and a splash of brandy, ignite to flambé the dish and serve when the flames die down.
