Chicken Enchiladas con Mole

Ingredients
1. Cooked chicken pulled or cut into small pieces.
2. Corn tortillas.
3. Packaged mole sauce. Some packaged mole’s are ready to use and others need to be diluted/thinned with chicken broth.
4. Chopped onion and cilantro for garnish.
Directions
1. Warm tortillas in a pan with hot oil.
2. Simmer the mole for about 5 minutes then dip each tortilla into the mole sauce and transfer to a Pyrex or other serving platter
3. Add chicken and roll.
4. Top with remaining mole and sprinkle with onion and cilantro.
5. Cover with foil and warm in oven before serving.
